I read all of Snuff by Chuck Pahlaniuk today and started on A Spot of Bother by Mark Haddon, author of The Curious Incident of the Dog in the Night. It was nice to spend my day reading although it's still never fun to be sick. This evening Davis and I were sitting around watching Big Brother UK and I suddently got a craving for sweets. I ended up making some really yummy Vegan Vanille Coconut Cupcakes. They don't look all that pretty because I made up my own icing and it wasn't fluffy enough to make pretty cupcakes but they sure taste good.
If you want to make them also here is the recipe:
Ingredients:
1 1/4 flour
3/4 cup raw sugar
1/2 tsp. salt
1 1/2 tsp baking powder
1/3 cup Earth Balance vegan butter
3/4 tsp vanilla extract
3/4 tsp coconut extract
1/2 cup soy milk
Mix up your dry ingredients in one bowl, wet ingredients in the other and then combine the two. Put into muffin cups and bake at 350 for 20 minutes. I bought reusable silicone muffin liners from superstore and they work great for making it easy to wrestle the cupcakes out of the liner as well as saving some paper.
